Julia had a lot to say about turkey. In fact, she devoted an entire section to it in her fourth cookbook, From Julia Child's Kitchen. Many a Thanksgiving Day throughout the 1970s and '80s would find Julia picking up her home phone and guiding frantic home chefs through preparing their turkeys (her phone number was still listed in the Cambridge, Mass. public directory).
